Icing for cupcakes or filling

Now I have done loads of cake recipes but never shown you the fool prof icing I use all the time with any cup cake

Yummy, sweet icing, to match any cupcakes :)! This goes particularly well with regular chocolate cupcakes, vanilla cupcakes, and coconut cupcakes. 

Ingredients
covers 12-15 cupcakes
110g unsalted butter, room temperature
250g icing sugar
150g white chocolate
1 tablespoon semi-skimmed milk (possibly)

Method
Beat the butter and half the icing sugar together until smooth (this may take a while and is a bit of a pain). Keep adding the icing sugar in bits and mix until all is smooth and like a paste.
Melt the white chocolate and add to the mixture and mix until smooth.
This is the maybe bit . . . depending on what white chocolate you use, it'll alter the runniness of your icing . . . so you may have to add the milk (maybe more than 1 tablespoon) or you may need to add more icing sugar. But it is very easily fixed.
Don't forget to mix your icing between icing each cupcake so it stays smooth! 


(I used a 50p bar of chocolate from my Conner shop last time and just needed a bit of milk extra but was absolutely fine to make and apply

Chocolate muffins

I think the title speaks for its self no one can resist chocolate muffins and these one are the easiest ever and can be made in under half an hour if your a wizz in the kitchen. 

Ingredients
Serves: 16 
175g (6oz) plain flour
1/4 teaspoon bicarbonate of soda
2 teaspoons baking powder
75g (3oz) cocoa powder
1/8 teaspoon salt
3 tablespoons butter, softened
300g (11oz) caster sugar
2 eggs
3/4 teaspoon vanilla extract
250ml (8 fl oz) milk 

Method
Preheat the oven to 180 degrees C (gas mark 4). Line a bun tray with paper or foil cases. Sift together the flour, baking powder, bicarbonate of soda, cocoa and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the paper cups 3/4's full.
Bake for 15 minutes in the preheated oven, or until a skewer inserted into the cake comes out clean. Ice with your favourite icing when cool.

The worlds best apple muffins ever

This recipe makes delicious muffins with a glorious soft, spongy centre. I add a sprinkle of icing sugar on top to add a nice finish to them. I'm having to make these every week because they just won't stay in the cupboard.(I think archie is the guilty party) They're that good!!  

Ingredients
Serves: 8 
200g plain flour
100g caster sugar
50g soft brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
90ml skimmed or semi-skimmed milk
80ml vegetable oil
1 large egg, beaten
5 drops vanilla extrect
2 large apples - peeled, cored and chopped
icing sugar 

Method
Preheat oven to 200 C / Gas 6 and add paper cases to a muffin tray.
Measure out flour, sugars, baking powder and salt in a large mixing bowl. Add milk, oil, egg and vanilla. Stir until just combined (mixture will be lumpy).
Gently fold in chopped apples and spoon mixture in muffin cups. Add a sprinkle of icing sugar on top of each.
Bake for 20 minutes or until golden brown on top, and enjoy!

super easy brownies

Delicious warm brownies make for a quick family dessert. If you are a dab hand in the kitchen, you might be able to make these in half an hour!

Ingredients
Serves: 20 
400g caster sugar
225g butter, melted
60g cocoa powder
1 teaspoon vanilla extract
4 eggs
225g plain flour
1/2 teaspoon baking powder
1/2 teaspoon salt

60g walnut halves (optional)((can change to anything you want)) 


Method

Mix all ingredients in the order given. 
Bake at 180 C / Gas mark 4 for 20 - 25 minutes in a rectangular 23x33cm greased baking tin.
Cool, and slice into equal square portions.

 I made these in about 35 mins the first I made them I put in chocolate chips and they tasted great so please comment down below with what you put in and how they tasted

I have blog before but i have just got back into bloggging on my other blog so i started to think about doing recipes on that blog but  now i have this one to post all my favorite recipes as i am adicted to baking (and eating it ) so that the background to my blog and what to exspect

2 min cup cake


Makes one cake in a mug

2 table spoons of sugar
2 table spoons of self raising flower
2 table spoons of cocoa powder
1 egg
1 table spoon of sun flower oil
1-2 table spoons of milk


method
 

Put the sugar into a medium sized mug  then add the flour  then add the cocoa powder and the egg and mix well then add the oil and milk and mix so there is no dry ingredients visible
then put in the microwave for 2 mins
